500g carrots, peeled and chopped into bite-sized pieces
150g red lentils, rinsed thoroughly to remove any impurities
1L vegetable stock (using stock cubes works just fine)
Salt and pepper, to taste for the perfect seasoning
Fresh parsley or coriander, for garnish that adds a pop of colour and flavour
For the Cheesy Pesto Toasties
4 slices of sourdough bread that are crusty and flavourful
2 tbsp green pesto, which adds a lovely herby flavour
100g mozzarella or cheddar cheese, grated your preference
1 tbsp butter, for frying to golden perfection
Method
Soup
Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and cook for 5 minutes, until it turns translucent and soft.
Add in the minced garlic and spices, then cook for another minute until fragrant, allowing the flavours to meld beautifully.
Stir in the chopped carrots, rinsed lentils, and vegetable stock. Raise the heat to bring the mixture to a boil, then reduce it and let it simmer for 20–25 minutes, or until the carrots are tender and the lentils are cooked.
Blend the soup with a hand blender until it reaches a smooth consistency (or leave it chunky if that’s your preference for added texture).
Season generously with salt and pepper, adjusting to taste as needed, for a perfectly seasoned soup.
Toasties
Spread the green pesto evenly on the bread slices. Top each slice with a generous amount of grated cheese, then close the sandwiches carefully.
Butter the outsides of the sandwiches and fry in a pan over medium heat until they become golden and the cheese is melted and oozing.
